Course Description

Eating well and understanding the nuances of food has become a complicated and often confusing experience. Virtually every day brings news about some “miracle food” that we should be consuming or some "poison" we should be avoiding. One day it's tomatoes to prevent cancer, then flaxseed against heart disease or soybeans for menopause. At the same time, we are warned about trans fats, genetically modified foods, aspartame and MSG. Dietary supplements are often touted as the key to health or a factor in morbidity. According to some, dairy products are indispensable while others urge us to avoid them. The same goes for meat, wheat and soy; the list goes on.

This course will shed light on the molecules that constitute our macro and micronutrients and will attempt to clarify a number of the food issues using the most relevant, up-to-date science available. Other topics to be presented will include the diet-cancer relationship, the link...

This course was an incredible help not only in my life but the ones around me. To know exactly what we eat, and how it is all related in a holistic way to our body, brain and even social dimension is very helpful information. I´m very sorry I had to drop it because I had to travel and could not pay the necessary attention but I´m planning to take it in the future again. Thank you professors for sharing your knowledge, I really enjoyed the videos.

Compared to others, this course is highly enjoyable. The professors are knowledgeable and it is apparent that they love what they do. Their genuine enthusiasm gleams through their videos! This course challenges you to think about the big picture in health sciences. Although I did not follow-through with the entire course, it truly was the most enjoyable.

I loved this course. The lecturers are obvious experts in their field and they eventually feel like they become a friend who will tell some pretty great stories. If you're interested in health and lifestyle then this course is for you. I didn't manage to finish a lot of the assignments due to my own personal time restrictions but this course is very doable and you'll probably find yourself wanting to finish it just for the information you'll learn rather than the certificate. This course really helped me establish my passion and I've recently just been accepted into a BA of Health Sciences with the hope of pursuing a career in dietetics. Thanks McGill!

This was my first MOOC. I had not studied Chemistry since high school a long time ago, but I found I could follows if well. I particularly enjoyed the video lectures -very informative, and presented with humour, I looked forward to the next lectures - really enjoyed the wine cheese and chocolate! My biggest difficulties were with any math (not my best subject) and I am not terribly proficient on the computer. Also, did not have a video camera or iPhone and had to borrow one. One assignment I failed because I forgot to mark I had done it. Outside of this, I found I enjoyed the course very much, found the posts from students all over the world fascinating. Along with the video lectures there were many suggestions for additional readings and videos, all of which most useful. I also liked that both sides of the issue, such as GMO foods, were presented. I personally found the course very rewarding and would definitely recommend it to anyo... This was my first MOOC. This course was awesome! Very informative, interesting, enjoyable and I was also sad to see it end. This was my first course, I enjoyed it tremendously, I felt so proud of my accomplshment. I can't deny that at 66 years old, I might have had to work harder and longer hours at this course, but it was worth every minute I spent on it. I took many many notes on this course because I had no printer to save all those lessons but I love the options that the course offered. With deep gratitude to the professors and staffs...they were all wonderful and did a great great job presenting this course.

Have learnt a great deal on the chemistry of the body in relation to food in a manner I could understand, not being of a scientific nature. This was my first online course and enjoyed very much the fact that professors took the time to teach various subjects on the matter of food and nutrition and all the websites recommended to read. I found the notion of discussing all matters of nutrition with others around the world fascinating and interesting and brought us all closer in this form. Some of the chemistry lessons were difficult for me to understand. I have learnt a great deal and look forward to studying something else next!

This is an extremely useful course with practical and useful tips with respect to issues that are essential for our day to day living. The course provided insight into very relevant contemporary issues with respect to food, dieting and exercise that was based on verifiable research. I would highly recommend the course as it does not have any prerequisites and the workload can be quite easily handled by someone with a full time job

I learned things in this class that would have taken me years to learn through searching on my own. There were questions I was pondering about GMOs, organic foods, pesticides, and nutrition - and hearing all kinds of anecdotal things without anything to really convince me. Through the teachings of the three professors (two of which I had the great pleasure of having as my teacher in Montreal), I have found the answers I was looking for and can make decisions based on scientific evidence.

This was a stimulating course that brings together a variety of practical areas of concern. The value of fats, sugars, carbs and proteins are well presented. There are some difficulties with using older computers and the iPad with some assignments and exams. These should be corrected by updating your computer. I just bought a new computer and will redo the course when it is offered again. I learned a lot and want to make sure that I get everything out of it.

This has been the first course I have taken with EDX and it has been a great experience! The Food for Thought course was very interesting, discussing a broad range of topics related to food, including production, preparation and nutrition science. It was both thought provoking and fun and I feel I have learned a lot; I am sorry it has finished already! The materials were well presented and the structure of the course made it easy to follow; the assignments were achievable. It was interesting to take part in the discussions with students from all over the world. I would definitely take part in any future courses!

One of the things I liked about this course was the scientific approach. Science is all about finding the truth, and, as was made clear in this course, there is a lot of half-truths and complete falsehoods published about food. The videos were all interesting. I had intended to audit the course, but I found the assignments and tests challenging; so I ended up doing all but the first assignment. I would recommend the course to anyone interested in the topic, as well as anyone who would like to know a little about the complex chemistry of foods.

As for my prior experience, I like and eat food on a regular basis. However, I am bombarded with opinions about what is good or bad about a type of food, what diet to follow, or do I need a supplement to complete my health profile, and this course provide numerous working tools resolve these questions. How does this course compare to others? This is my second edX course and I felt better about approaching it. I am still learning how to get the more out of the courses. The discussion-boards are my biggest challenge. I enjoyed the course. In 14 weeks, I was exposed to many ideas new to me, some ideas were re-enforced, and a few of my ideas needed to be replaced with fact. Yes, portions of the course reviewed the basics of fats, carbohydrates, and proteins, but getting and understand of food allergies was new along with other approaches to food. An excellent course, interesting, short and varied videos, regular exercises, many fields covered, serious tests, many references and readings if you want to study at a more advanced level. An excellent opportunity to see what people all over the world think about food, what they eat. The course helps fight preconceived ideas we all have about food and what we should eat or not, thanks to thorough scientific knowledge. Highly recommanded course!
